Strawberry Banana Coconut Muffins: from Muffin Tin Mania

Here is a VERY yummy recipe I found on muffintinmania.com
This gentleman (I didn’t see a name anywhere) explains a few of the many benefits of being slightly “pickier” when choosing a flour for your baked goods. This particular recipe is very simple and quick once you’ve got the ingredients on hand.

Grocery list:
whole wheat pastry flour OR light, mild whole wheat flour
coconut flour
baking soda
cinnamon
salt (i didn’t use any salt when I made them and they tasted just fine!)
strawberries (fresh or frozen)
egg
oil
vanilla
sugar of choice
2 ripe bananas, mashed
After making a batch, I froze the remainder in a ziploc. Every now and then I’ll pop one in the microwave for a quick snack!
